24 thin slices of bread (I prefer brown, and not too freshly baked)
2 cans (410g) of Tomato/ onion mix
Handful of fresh basil leaves
2 medium cloves of garlic
Seasoning as necessary
Paprika
Cheese

Put tomato mush in saucepan with basil, garlic and seasoning and cook quickly (with stirring) to thicken. Put pot in sink of cold water to cool while getting bread ready.
Heat oven to 2000C. Cut rounds of bread with large cookie cutter to take full width of bread slice (keep left over bread pieces to dry and make bread crumbs, or give to the birds). Butter generously on one side of bread-round and put butter side down in pockets of muffin tins. Fill cavity with slightly cooled tomato mix. Top with grated or thinly sliced cheese and bake for about 10 mins till bread is toasty and cheese beginning to brown. Serve sprinkled with paprika and a few small basil leaves.
