Ingredients MUST be added in order given or pudding will not form lemon
curd as bottom layer and sponge mixture on top.

Noelene’s Lemon Delight

 

1 tablespoon butter or marg.
3/4 cup castor sugar
Juice of one lemon
2 level tablespns flour
2 eggs, separated ...... use XL
1 teacup milk

 

Cream butter, add sugar and beat until light.
Add flour and lemon juice and mix.
Mix in the egg yolks.
Add milk, stirring in gradually.
Lastly fold in stiffly beaten egg whites.
Pour into greased pie dish. Place pie dish in baking tin with cold water.
Bake in a moderate oven for about 45 mins. Must be served with cream or custard.
The above quantity doubled, turns out very well in a 21 cm square pie dish. Fresh lemon juice appears to be more successful than bottled lemon juice
